When installing a charcoal grill in a room (both a barbecue grill and a josper type grill oven), the company faces the problem of smoke removal and compliance with fire safety standards. In general, there are two ways to remove smoke:

  • heat-insulated chimney with natural or forced draft;
  • output to the ventilation duct (including the common kitchen air duct) through a hydrofilter.

A heat-insulated natural draft chimney must comply with fire safety standards SP 7.13130.2013. But as a rule, in cities, the features of buildings do not allow such a chimney to be laid, or it turns out to be too expensive. In addition, the institution faces the task of ensuring periodic cleaning of the chimney in order to avoid the risk of ignition of fatty deposits. Due to the complexity and shortcomings of the above method, the method of smoke removal into the ventilation duct (including the general kitchen duct) through a hydrofilter is gaining more and more popularity.

The hydrofilter not only reduces the temperature of the smoke to 40-50 °C, but also cleans it of soot and grease, thus preventing fires in the air ducts caused by grease deposits. The filtering method is based on the simplest and, at the same time, the most efficient way cleaning - using water, which filters and purifies all the smoke generated during the combustion process. The smoke passes through several stages of purification through a system of labyrinth filters and water curtains created by suffocating devices.
